Decided to combine chocolate mousse and a cake to create an orange chocolate mousse cake.
I didn’t want the orange flavor to be too strong so it’s only in the base. The 2 other layers are pure chocolate.
Optional: You can change the recipe to include chocolate in all 3 layers; same with the orange zest, or even add a layer of orange jelly in the middle layer.

- Base
- 75 g Plain Flour
- 50 g Caster Sugar
- 0.5 tsp Baking Powder
- 70 ml water
- 30 ml Grapeseed Oil
- 1 Orange
- Chocolate Mousse
- 200 g Dark Chocolate
- 500 ml Double Cream
- 10 g Gelatine Powder
- 30 ml water
- 100 g Caster Sugar
- Ganache
- 80 g Dark Chocolate
- 75 ml Double Cream

Instructions
- Preheat the oven to 180C.
- Start by making the cake base.

- Put the flour, sugar, baking powder and the finely grated orange’s zest into the mixing bowl.

- Add the oil and water.

- Mix until it has a smooth consistency.

- Pour the cake batter into the cake mould.

- Bake for 15 mins.
- leave it to cool.
- Then let’s prepare the chocolate mousse.

- Mix the gelatine powder and water.

- Melt the chocolate in a heatproof bowl over a pan of gently simmering water or in the microwave for 1 min 30.
- Mix 60ml of cream and the sugar in a saucepan and start cooking at medium heat.

- Pour the mixture from the saucepan on the chocolate and add the gelatine.

- Mix until it has a smooth consistency.

- Add the rest of the cream to a mixer fitted with a whisk attachment. Whisk on high speed until medium to stiff peaks form.

- Mix 1/4 of the whipped cream with the chocolate ganache.

- Now mix the ganache to the rest of the whipped cream and gently fold it in.

- Fold it in until it has a smooth consistency.

- Pour on the orange cake and use a spatula or a knife to smooth the top.

- Put clinging film on the mould and refrigerate it for at least 4 hours.

- Let’s finish with the ganache.

- Take the cake out of the fridge.

- Put the cream into a small saucepan at medium heat.
- When the cream start simmering, pour it on the chocolate and wait 20sec.

- Mix until it has a smooth consistency.

- Pour the ganache on the cake. Use a spatula to smooth it out and to cover the cake.

- Your orange chocolate mousse cake is now ready! It makes a perfect dessert for your friends or family!
