Deconstructed Eggs

It was on a Friday night, I only had eggs in my fridge and felt like trying something new. Why not taking the egg and not preparing them in the same way, hence deconstructed eggs.

I went totally freestyle, combining bits and pieces I saw on videos or on TV. I ended up with very interesting mix of textures, there is lot of things I could improve on this recipe but the main ideas are there.

Instructions
  1. Separate two of the egg yolks and whites
  2. In a large bowl, whip the egg whites until firm along with a pinch of salt and the spices of your choice, I went for tumeric and smoked paprika
  3. In a large pot, put water to boil.
  4. Poach the beaten egg whites, 1 min each side.
  5. Remove with a slotted spoon and drain on kitchen towels
Yolk Sauce
  1. Mix the yolks with salt, pepper and a tablespoon of olive oil before beating them to obtain a smooth mix
Poached Eggs
  1. Fill a small pan just over one third full with cold water and bring it to the boil.
  2. Add the vinegar and turn down to simmer.
  3. Crack the eggs one at a time into a small bowl and gently tip into the simmering water.
  4. Lightly poach for 3-4 minutes.
  5. Remove with a slotted spoon and drain on kitchen towels
  6. Spoon the sauce over the eggs
